Make rich, creamy gelato at home with this easy recipe using the Ninja Creami. This black cherry gelato balances velvety texture with fruity sweetness, inspired by traditional Italian gelato. Perfect for summer treats or anytime indulgence!

Gelato Base:

  • 1 cup (8 fl oz) heavy cream
  • ⅓ cup (3 fl oz) whole milk
  • 4 large egg yolks
  • 1 tbsp light corn syrup
  • 5 tbsp granulated sugar
  • 1 tsp almond extract (or substitute vanilla extract)

Mix-Ins:

  • 1 cup black cherries (frozen and thawed, or fresh, quartered)

Optional:

  • 12 tbsp whole milk (to adjust texture during processing)

Instructions

1. Prepare the Custard Base:

  • Heat cream, milk, sugar, and corn syrup in a saucepan over medium heat. Stir constantly until frothy (don’t let it boil).
  • In a separate bowl, whisk egg yolks. Gradually add a few spoonfuls of the hot cream mixture into the yolks, whisking nonstop to avoid curdling.

2. Temper and Cook:

  • Pour the tempered yolk mixture back into the saucepan. Cook on low heat, stirring frequently, until thickened (165°F on a thermometer or when it coats the back of a spoon).
  • Remove from heat and stir in almond extract. Allow the custard to cool completely.

3. Freeze the Base:

  • Transfer the cooled custard into a Ninja Creami pint container. Seal tightly and freeze for at least 24 hours.

4. Process the Gelato:

  • After freezing, process the pint in your Ninja Creami machine using the “Gelato” setting.
  • Make a well in the gelato, add quartered cherries, and reprocess on the “Mix-In” setting.

Notes

Serving Suggestions:

  • Serve in bowls or waffle cones. For extra flair, garnish with chocolate shavings, fresh mint leaves, or toasted almonds.
  • Pair it with biscotti or shortbread cookies for a crunchy contrast.

  • Use fresh or thawed frozen cherries for the best texture; avoid canned cherry pie filling.
  • If the gelato is too firm after being stored in the freezer, let it sit at room temperature for 10–15 minutes or re-spin with 1–2 tbsp milk.

  • Keep leftover gelato in an airtight container or the Ninja Creami pint. Properly sealed, it will last in the freezer for up to 2–3 weeks without losing flavor or texture.
