Ingredients

Scale

For the Ice Cream Base:

  • 1½ cups half-and-half or whole milk
  • ½ cup cottage cheese (softened)
  • ½ cup condensed milk
  • 2 teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • 1 tablespoon monk fruit sweetener (or sugar/honey)

For the Mix-Ins:

  • 1 large apple (peeled, cored, diced)
  • 1 tablespoon butter
  • 1 tablespoon dark brown sugar
  • Dash of cinnamon
  • Crumbled graham crackers

Instructions

1. Blend Your Base

In a blender, combine half-and-half, cottage cheese, condensed milk, vanilla, cinnamon, salt, and sweetener. Blend until smooth. Taste and adjust sweetness, if needed.

2. Freeze the Mixture

Pour the blended base into a Ninja Creami pint container, leaving about ½ inch at the top. Cover tightly and freeze for 24 hours.

3. Prepare the Apple Mix-Ins

Melt butter in a skillet over medium heat. Add diced apples, brown sugar, and a dash of cinnamon. Cook for 5–7 minutes, stirring, until apples are tender but firm. Cool completely before use.

4. Process the Ice Cream

Insert the frozen base into the Ninja Creami machine and process on the “Ice Cream” setting. If the texture looks crumbly, use the “Re-spin” function to smooth it out.

5. Add the Mix-Ins

Make a small well in the processed ice cream. Add the sautéed apples and crumbled graham crackers. Use the “Mix-in” function on the Ninja Creami to combine.

6. Serve and Enjoy

Scoop the ice cream into bowls or cones. For extra indulgence, top with whipped cream or caramel drizzle!

Notes

Serving Suggestions:

  • Serve in chilled bowls or cones.
  • Pairs beautifully with warm apple crumble or shortbread cookies.

Tips & Tricks:

  • Make sure the base is fully frozen (24 hours or more) for the best texture.
  • Taste the base before freezing, as sweetness dulls after freezing.
  • Avoid overloading with mix-ins—use just enough for added flavor.

Storage:

  • Store leftovers in an airtight container in the freezer for up to 1 week.
  • Let it sit at room temperature for 5–10 minutes before serving to soften slightly.
